It’s not green, eco-friendly or mindful but by golly it’s deeeeelicious.
Today marks the first day of Passover or Pesach for Jewish people around the world. It is an eight-day festival marking the Exodus from Egypt and the liberation of the Jewish people from slavery. Passover also has a seasonal theme marking the release from the cold winter.
My friend Michelle shared her Passover family recipe with me years ago when she served coffee and candied Matzah during a visit. (Also, spelled Matzo/Matza/Matzoh is unleavened bread baked into crackers, eaten during Passover.) On it’s own, Matzah can be salty or plain like any cracker. Michelle’s baking turned it into a chocolate, caramel, crunchy addictive combo that was absolutely brilliant.
Not only is it delicious, it is super easy to make too. After whipping up a double batch this weekend and eating too many “not suitable for company” pieces, I want to share the recipe with fellow foodies out there.
You do not have to be Jewish to enjoy this sweet treat. Matzah crackers are in the grocery stores and easily available. If you are lucky enough to be invited to a Passover Seder dinner, why not make candied Matzah as a hostess gift? You will be a superstar.
Michelle’s Candied Matzah
6 pieces of Matzah
1 cup firmly packed dark brown sugar
1 cup of unsalted butter
Chocolate chips
Method
Melt butter and brown sugar on the stove. Bring it to a boil and then cook for 3 minutes.
Place Matzah on a parchment lined baking sheet. Pour caramel over Matzah to coat and bake for 10-15 minutes in a 325 F oven until bubbly and golden brown. Watch closely so it does not burn.
Remove from oven and sprinkle with chocolate chips. Spread the melted chocolate. Cool and break into pieces. Store in an airtight container.
